Ce que vous allez faire

In this workshop, you can look forward to a fun, hands-on session going over everything you ever wanted to know about using and maintaining a wild-yeast, naturally fermented sourdough starter. By learning the techniques used by artisan bakers, you’ll get peak performance from your starter and will learn how to prepare it for baking all your favorites like pizza and traditional rustic loaves. In this 2-hour workshop, we’ll look at all the angles to feeding and maintaining a sourdough starter, and use it to make a yummy sourdough flatbread in class. At the end of class, we'll stretch and put toppings on your very own, freshly baked San Francisco sourdough and we'll enjoy them together. You’ll go home with your own starter, as well as the knowledge and confidence to use it to bake your own sourdough bread at home.

I've been baking and teaching about the art and science of sourdough for 10 years in San Francisco. I love the different flavors that come out with sourdough, especially enjoy the challenge of working to make the perfect loaf. I've worked closely with many other food entrepreneurs and chefs in the Bay Area, and love the diversity and quality of food which we are surrounded by. Our bakery is housed in La Victoria Bakery, a Mexican Panaderia, which has been a wonderful partnership. Ashton, our primary sourdough bread instructor has been working with Sour Flour for several years. In addition to teaching classes, he cares for our sourdough starter, mixes large batches of sourdough, and you can often find him at the Farmer's Market selling our breads.

We are housed in a small bakery in the Bayview and share the space with La Victoria SF. You'll get to experience a fully functioning production bakery, and experience some of the differences from your home kitchen.
