It's easy to take the Amtrak train to Vancouver. It is a beautiful city and fairly walkable. Take the first train of the day as it travels along the water and is a beautiful ride.

Take the Victoria Clipper to Victoria for a day, or overnight or weekend. It is a beautiful city and the Victoria Clipper takes you right from Seattle waterfront to Victoria's inner harbor. Once there everything is walking distance. There's great biking infrastructure as well.
