muy, muy castiza.. a favorite of Ernest Hemingway & obviously NO WEB!!!! SERVES EXCLUSIVELY VERMOUTH!!! Must try the “olorosa & mojama” There is a cat that live here!

One of the oldest taverns that has not changed, with great Manzanilla, Fino, etc. Order Mojama (like Spanish ham, but made out of Tuna, delicious) to go with your wine. Tips not accepted, house policy

Historic bar with super good sherry (Jerez) and great tapas. Try the cecina. Not expensive at all. ***They don't allow photos to be taken!!! They also don't accept tips***

One of the most charming bars in Madrid. They only serve fantastic Sherry wine and incredible tapas. No music, no photos allowed, no credit cards, no tips accepted. The waiter´s write your orders with chalk on the wooden bar. It´s like travelling back to 1900s. Perfect for "aperitivo" before lunch or dinner. On the evening of Friday or Saturday try to go when they open at 19:00 or don´t bother at all since it is becoming increasingly popular. For the first time I would suggest to drink Manzanilla, Fino o Palo Cortado and to order a tapa (smaller than ración o media ración and enough to taste) of mojama (dry-cured tuna loin), lomo (dried-cured pork loin) and queso (aged manchego cheese).
